A few hours before making sandwiches, place whole packages of Honey or Cinnamon Grahams in their original packaging into freezer. Frozen graham crackers will be less likely to crack when sandwiches are gently squeezed together.

Working quickly, peel end square of ice cream off plastic wrap, add second cracker to back to make sandwich, and squeeze them gently together. Place sandwich back on sheet pan that previously held ice cream. Continue until all sandwiches are made.

After straining out the graham crackers, I folded in more chopped up graham crackers and chocolate chunks and chips and flakes made by melting chocolate, spreading it thin, and breaking it up into bits and pieces after it is solid. Pop it into the freezer, and a few hours later you have magical goodness.

So my ice cream-loving self decided to come up with a similar version that I could make quickly, easily, and cheaply at home. And oh boy, this no-churn graham cracker ice cream turned out AMAZING! Everyone in my family approved and it was gone in three days.

Set the milk and cream mixture over a larger bowl of ice water until cold. Refrigerate until completely chilled. Combine the milk/cream mixture with the lemon slush mixture. Spin in the ice cream maker according to the manufacturers instructions. In the last few minutes of churning, add your graham cracker crumbs.

I then added graham cracker pieces to the ice cream base. I thought they might get soggy but if you add them right before freezing they actually retain some of the crunch and still have all of the flavor. I love graham crackers in my ice cream. It reminds me a a cheesecake that way.

The sweet and creamy ice cream is broken up with the bright blueberry jam swirl. Then the graham cracker flavor really comes through as well and it ends up tasting like blueberry cheesecake! It's a super yummy ice cream and I love that it's so easy to make with this no churn method. Give it a try this summer; you'll thank me!
